Bone Broth Yumminess

Okay so NOT a photography post....but I do love low carb, whole food goodness.  I'm not perfect at this whole healthy eating thing BUT I try to do what I can given my finicky pallet.  Recently I discovered the wonders of an electric pressure cooker AND the magic of using it to make bone broth.  Instead of hours/days of slow cooking bones, it is done in minutes!  60 to 90 minutes to be exact!  So simple and easy.  

 

Pressure Cooker Bone Broth

 

Ingredients:

Bones!  2 to 3 pounds of bones (more or less! Eyeball it! I use Beef and Oxtail)

1 carrot (cleaned and chopped in half)

1 onion (peeled and chopped in quarters)

1/2 tablespoon of apple cider vinegar (important!  it helps the bones give up the good stuff!)

1T salt (some people put less some put more.  less is best)

2 Quarts Water (or to fill line in pressure cooker

 

Throw all ingredients in your pressure cooker, set your cooker to high pressure and your timer for 60 to 90 minutes.  My particular pressure cooker limit is 60 minutes so I restart it for an additional 30 minutes after the first 60 minutes have passed.  Let pressure cooker steam release naturally.  Scoop out all the veggies and discard.  Scoop out bones and save for a second bone broth!   Yes its true you can use your bones more than once!  I don't recommend reusing chicken bones though, they can be too brittle. I let my bones cool and then put them in a plastic bag to freeze until the next Bone Broth day. 

 

Once the broth has cooled to warm or room temperature, pour broth through strainer into containers  I actually use a strainer over a funnel.  My broth normally fills three large old pickle jars.  Refrigerate until completely cooled then remove the oils that have solidified on top.  

 

Notes.  I have friends who like to add leeks and bay leaves and all kinds of different ingredients to flavor there broth.  That is completely fine of course, I just like the simple goodness of bones and a few innocent ingredients.  :)  Its really all about what you like!  As far as bones.  I personally prefer Ox Tail, Pig Neck (get it from my local grocery store.)  Also I found frozen beef bones (sold in the freezer section of course,) just waiting for us bone broth lovers!)  

 

So yummy!  Makes a great afternoon pick me up or a warm drink with lunch or dinner.  After the third day in the fridge, I poor the broth into plastic Mason jars and freeze.  LOVE it!  Give it a try you won't be disappointed!

 I realize this is not an attractive picture!  Next time I make bone broth I will photograph the progress.  Give me a break I didn't know I was going to do this until today (which was freeze the bone broth day!)
